SUMMARY:           

Assists with Kitchen Line set up and coordinates all food items to be used on the Line.  Must be capable to cooking items common to pantry, grill/fry, salads and desserts.  Assists in all clean up and shutting down of the shift they are working. Makes a constant effort to improve working conditions and procedures to upgrade food quality set by the Executive Chef and is constantly aware of food inventories needed for service. Keeps kitchen clean at all times.

 

ESSENTIAL DUTIES AND RESPONSIBILITIES

* Produce high quality food in flavor and presentation.
* Cooks and prepares all food tickets in a timely manner
* Adheres to the specifications, standards and proper recipe production of high volume food items set forth by management
* Utilizes ovens, slow cookers, grills, griddles, broilers, deep fryers, braisers, steam jacketed kettles, ranges, salamanders, steamers, combination ovens, electric slicers, knives, steam tables and other equipment for food preparation
Essential:
* Maintain consistency in plate presentation and flavor
* Maintains productions, temperature and waste charts
* Ensures that all menu items are maintained and consistently stocked and rotated
* Stores all foods at correct temperatures
* Dates and labels all food items
* Uses knife skills to prepare raw ingredients
* Utilizes ovens, slow cookers, grills, griddles, broilers, deep fryers, braisers, steam jacketed kettles, ranges, salamanders, steamers, combi-ovens, electric slicers, knives, steam tables     and other equipment for ala carte food preparation
* Prepares hot and cold food items to according to specifications
* Maintains consistency in food presentation and flavor
* Utilizes proper cooking techniques that ensure consistent production results
* Stocks production area for efficient daily operation
* Assists Sous Chefs in all areas of productions
* Acts in a friendly and professional manner to guests and co workers
* Maintains a clean, neat and sanitized work area
* Sets up and stocks work station in a self motivated manner
* Presents a professional, neat and clean appearance at all times
* Cleans and organizes kitchen areas per instructions from Chefs, including storing incoming goods, sweeping, mopping and scrubbing
* Assists with inventory and product requisitioning
* Provides feedback to Chefs on quality of incoming goods
* Reports product shortages, equipment issues and safety concerns to Chefs
* Cook and prepare all food tickets in a timely manner, as dictated by the point of sale system
* Communicates verbally orders to coworkers to insure that all food is presented at the same time
* Assists Chefs with other tasks as assigned

QUALIFICATIONS 

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required.


* Ability to learn at a fast pace and help train others
* Hot food production knowledge including roasting, sautç', broiling, deep frying, shallow frying, steaming, boiling, braising, large batch cookery, sauce production, soup production
* Working knowledge of American food production techniques
* Cold food production knowledge including but not limited to salads, fruit platters and dressings
* Working knowledge of Health Department sanitation regulations
* Culinary degree, culinary vocational school diploma or work experience equivalent to preferred
* Must be fluent in verbal and written English


 

EDUCATION and/or EXPERIENCE

·    * Has 3 years experience in specialty cooking.   

     * Has accurate high production knife skills.

 

CERTIFICATES, LICENSES, REGISTRATIONS

MATHEMATICAL SKILLS

Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. 

 

COMPUTER SKILLS

Must have Microsoft Office experience and basic computer skills.

EDUCATION and/or EXPERIENCE

·       One to two years in food service environment preferred.

·       Must possess proficient knife skills, knowledge of all kitchen equipment usage, kitchen safety, and etiquette.

·       Must place an emphasis on a high level of guest service and give the best service possible

·       High school diploma or GED equivalent

 CERTIFICATES, LICENSES, REGISTRATIONS

Obtain necessary food handling / health department work cards as defined by local jurisdiction.
